I have recently been looking at different types of Diets or I should say I want to change the way I am eating and lose some weight but also be healthier. The Dukan Diet is a high protein diet that was created by French doctor Pierre Dukan. I want to share a couple delicious and healthy recipes perfect for a Labor Day Weekend BBQ or a weekend family picnic that are perfect for those trying the Dukan Diet or who are just looking for a new healthy alternative to classic picnic dishes.

Ingredients:

4 types of cheese (choose your favorites)

Whole grain bread, sliced or Mary’s Gone Crackers

Cornichon pickles to garnish plate

Preparation:

Arrange Cheeses, bread or crackers and pickles on platter.

Use cheese knives to slice chees and serve with crackers or bread.

Serves 4

1/2 lb. large shrimp, rinsed, cooked and peeled

1 cucumber

1 fresh fennel bulb

1 teaspoon mustard

1 tablespoon lemon juice

1 teaspoon tomato paste

1 tablespoon balsamic vinegar

salt and pepper

Preparation:

Dice the shrimp, cucumber and fennel bulb

In a small bowl whisk together the mustard, lemon juice, tomato paste, balsamic vinegar, salt and pepper.

Mix dressing with shrimp, cucumber and fennel bulb

To serve, place a round cookie cutter on the plate and fill with the mixture. Serve immediately.

Serves 2

 

Don’t you think these sound like they would be great to bring on a picnic? They are both so easy. I am going to try a few other items in the next couple weeks from Dukan Diet I will make sure I do a review and let you know how I am doing and let you know how the products are.
