I do love bacon and recently GoodCook.com provide me with a great Cast Iron Grill pan and a Bacon Press. I used the Cast Iron Grill in my Thanksgiving Turkey Burger in the get stuffed Burger Challenge which is still going on - so don’t forget to vote 3 times a day until Sept 17, 2013. My burger is on the Anything-Else Burger.

This week I used the cast iron grill and bacon press to make a great tasting Asian Bacon Chicken Sandwich. It was so good. IMG_1590

After putting the chicken in a marinate - which I will give you the recipe for below I put my bacon on the GoodCook.com cast iron grill and put the bacon press on it to cook the bacon faster and more even. Even helps the grease from splattering a bit.

After the bacon was done I put it on some paper towels to absorb the grease and started cooking the chicken breast in the cast iron grill. When the chicken was almost cooked through I put some fresh pineapple in the cast iron grill to lightly brown it and give it a bit more sweetness.

While the chicken was cooking I cut up my fresh veggies - lettuce, tomato and red onion. I also toasted the Naan Bread that used for a the bun.

Ingredients
  • 4 chicken breast
  • 4 slices of thick cut bacon
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 3 tablespoons Hoison sauce
  • 4 slices fresh pineapple
  • 2 pieces Naan Bread
  • Tomato
  • Lettuce
  • Red Onion
Instructions
  1. Mix the soy sauce, honey and Hoison sauce together in ziplock storage bag. Add the chicken and marinate for 1 hour or overnight for best taste.
  2. Cut the bacon in half and grill in cast iron grill using the bacon press to flatten the bacon. Cut the way you like it - I like it crisp. After cooked put on paper towel to absorb the grease. Next cook the chicken in the cast iron grill until cooked through. Then lightly grill the pineapple and Naan Bread.
  3. To assemble the sandwich layer as below

  5. Lettuce
  6. Grilled pineapple
  7. Chicken
  8. Tomato
  9. Red onion
  10. Bacon
  11. Naan

My sandwich was so good and I loved using my cast iron grill each time I use it the pan gets seasoned a bit better. What I love most about it is that nothing sticks to it and it is pretty easy to clean. The bacon press is something I always wanted and love how it helps make the bacon flat and cook even. I can use the press for making great sandwich and may other things.
