Did you know September is national Mushroom Month? I love mushrooms and I like to add them to most of my recipes. Friday nights they are added to pizza, Saturday mornings to omelets, Sunday night a roast. Tonight they will be added to my shrimp Alfredo. One of the reasons I like to add them is that they provide an extra serving of vegetables and deliver important nutrients including niacin, selenium, and riboflavin. Mushrooms also have vitamin D and potassium two things I need more of.
Tonight I am also serving a Mushroom Naan Pizza. Here is my recipe.

Ingredients
- 1 cup white mushrooms
- 1 cup Crimini
- 1 cup chanterelles
- 2 cloves garlic minced
- 1 tablespoon olive oil
- ¼ cup Alfredo
- ½ cup Italian cheese
- Fresh basil
- 1 Naan
Instructions
- Place the 3 mushrooms cut in to 1 inch pieces in a pan and mix with the garlic and olive oil - roast for 20 minutes at 425.
- Mean while toast the Naan slightly and then spread the Alfredo on top.
- When mushrooms are roasted place on Naan and sprinkle the Italian Cheese over the top.
- Broil until cheese is bubbly and brown
- Top with chopped fresh basil.
- Enjoy!
