I have always wanted a pan to madeleines. Madeleines are small sponge cakes with distinctive shell-like shape. They are a favorite in France. A génoise cake batter is used. The flavour is similar to, but somewhat lighter than, sponge cake. Traditional recipes include very finely ground nuts, usually almonds. A variation uses lemon zest, for a pronounced lemony taste. I was excited to try this nonstick pan from Bellemain.
The pan can make 12 Madeleines at a time. The pan is solid and made of durable carbon steel. It will last for many years and is resistant to denting or bending. The pan is also coated with a nonstick coating. Making it easy to get the madeleines out of the pan and clean up is a breeze. You can even put the pan in the dishwasher and it comes out great!
