I have been wanting to try to be a bit more healthy this year ~ so when I read that the recipes in Gluten Free Goes Gourmet are gluten free, dairy free, low glycemic, corn free, and kosher I wanted to try some of them. I found that the recipes I made were really good and Rex really enjoyed them. I know this will be a book I use again and again to make great meals. There are a number that I want to make for guest when they come over. The author Vicky Pearl is a practicing nutrition coach and has been helping people eat better for almost two decades.
I really enjoyed looking through this book and trying a few of the recipes. The recipes were easy to follow ~ my favorite so far has been the Chicken a la Chasseur. It reminds me a lot of Chick Marsala.
Doesn’t this look good? I served it with lots of vegetables. Both Rex and I liked the chicken. It turned out with lots of flavor and was very moist.

- 1½ lb chicken cutlets (4 large slices), pounded thin
- ½ cup potato starch
- 4 Tbsp oil, divided
- 1 box (8–10 oz) fresh mushrooms (buttons or stuffers)
- 1 large onion, diced
- ½ cup semidry red wine
- 1½ tsp kosher salt
- ¼ tsp freshly ground pepper
- ½ tsp dried oregano, optional
- Coat chicken in potato starch.
- Heat half of the oil in skillet set over medium heat.
- Cook chicken in batches if necessary, until golden, about 2 minutes on each side.
- Remove chicken from the skillet.
- Peel mushroom caps if desired. Remove stems; slice thinly.
- Heat remaining oil in skillet. Add onion; saute’ until translucent. Add mushrooms to skillet; saute’ 5 minutes.
- Stir in wine, salt, pepper, and oregano(if using) Increase heat to medium-high; cook for 5 minutes.
- Pour in 2 cups water and bring to a rolling boil.
- Return chicken to skillet, cook, covered, for 8 minutes
