IMG_1946I love Thanksgiving. It is one of my favorite holidays. I live in Portland, Oregon and my family lives in Greenville Wisconsin. I don’t get to spend Thanksgiving with them all and eat all the great food that they have, or watch the Turkey Bowl that my nephews play. I still make a nice big Thanksgiving dinner but we have a ton of left-overs. This year it was Rex, Joey, Rex’s his son and Ashleigh, Joey’s girlfriend. Nothing like the 50+ people at my Mom’s. We had way to much food. So I needed to find things to do with all the extra’s.

One of the items I made was bacon wrapped stuffed mushrooms. These are so easy and taste so great! I didn’t even get them out of my Good Cook Nonstick Biscuit & Brownie Pan, 11″ X 7″ before they were all eaten.

This is such an easy recipe. I had some whole mushrooms which I took the stem out of and cleaned. Then I took some cream cheese with chives and stuffed a little in the mushroom - about 1/2 teaspoon each mushroom. Then I filled the rest of the mushroom with left-over stuffing and wrapped a piece of bacon around the mushroom. I put them in my nonstick pan at 350 degrees and baked them until the bacon was crispy - about 15 minutes. What a great combination of mushroom, cream cheese stuffing and bacon. It had so much flavor and helped me use up some of my left-overs.
