Chicken, Bacon and Ranch Quesadilla
- 2 La Tortilla Factory low carb tortillas
- 3 oz cooked and chopped up chicken (great way to use left overs)
- 2 pieces crumbled bacon
- Sauteed onion and mushrooms (I use about ¼ cup combined)
- Shredded cheese to taste
- 2 tablespoons Ranch dressing divided
- The first thing I do is saute the onion and mushroom together until tender (5 min)
- Add the chicken and crumbled bacon and heat till warm
- Lay one tortilla in a frying pan
- Layer on the chicken mixture, cheese on the tortilla
- Use 1 tablespoon ranch dressing and drizzle it over the top
- Cover with 2nd tortilla
- Heat until the bottom is lightly browned and then flip the tortilla, be careful your fillings do not fall out
- When the top is browned remove from pan - cut into pieces and enjoy dipping in reserve ranch dressing
