Chicken, Bacon and Ranch Quesadilla
 
Ingredients
  • 2 La Tortilla Factory low carb tortillas
  • 3 oz cooked and chopped up chicken (great way to use left overs)
  • 2 pieces crumbled bacon
  • Sauteed onion and mushrooms (I use about ¼ cup combined)
  • Shredded cheese to taste
  • 2 tablespoons Ranch dressing divided
Instructions
  1. The first thing I do is saute the onion and mushroom together until tender (5 min)
  2. Add the chicken and crumbled bacon and heat till warm
  3. Lay one tortilla in a frying pan
  4. Layer on the chicken mixture, cheese on the tortilla
  5. Use 1 tablespoon ranch dressing and drizzle it over the top
  6. Cover with 2nd tortilla
  7. Heat until the bottom is lightly browned and then flip the tortilla, be careful your fillings do not fall out
  8. When the top is browned remove from pan - cut into pieces and enjoy dipping in reserve ranch dressing
