I am sorry I have been gone so long. As in my last post I mentioned I have colon cancer. I am now going through my third round of Chemo. I don’t know how many rounds I need to have – but they come in blocks of 12 sessions every two weeks. This one will be done in January 2023. Seems so long away – but I keep fighting and working full time.

I plan on writing more and help others going through not only colon cancer but any type of cancer. I want you not to struggle by yourself – to know you are not alone. I also want you to know that you are beautiful and need to treat yourself that way. I am going to find beauty products, foods and just items that will help keep you feeling good about yourself. I have noticed that some mornings I don’t even look in the mirror – because I hate that I have lost my hair, but I still know my husband doesn’t mind and he loves me no matter what. I hope you have that support. Please know I am here to support you too. I know your pain, I know your tears and sadness, and your achievements. I have been through them all. I will follow with my struggles so you know you are not alone.

crunch-pakI try to bring my lunch and snacks to work every day first to save money and second because the food I bring is healthier and taste better.  I am always looking for more interesting things to bring and I recently found Crunch Pak.  They have some great products.IMG_1410

Here is one of my favorite cut up apples in individual packages.  These are about 30 calories and are a great afternoon snack with yogurt or cheese.  They also have some packages that have caramel yum!!! It makes things so much more convenient and helps prevent me from going to the vending machine.

Crunch Pak has lots of good options they have Apple Snackers that include a variety of snacks – like one with apples, grapes and cheese.  I also noticed the last time I went to the store they salad kits – one is a Waldorf Kitz feature diced sweet & tart apples, goldenraisins, dried cranberries, candied walnuts & pecans,and Waldorf dressing. It comes with enough ingredients to make 4 1/2 cup servings. How easy would it be to add this to your meal and get more fruit in your diet.

I am always on the look out for something health and something that taste good.  I recently tried some cookies from Natasha’s Health Nut Cookies.  They are all natural, gluten free, low-glycemic and diabetic safe. The Health Nut Cookies are made with almond flour.  They contain no Trans fat, artificial sweeteners and no refined grains.  I think these would be great for my Mom who is diabetic but still loves sweet.IMG_1230

Natasha’s Health Nut Cookies come in 3 great flavors.  My favorite is the Cranberry Orange it had lots of flavor.  It had lots of cranberries and even some coconut.  They reminded me of Thanksgiving – with all the great flavors.

There is also a Raisin Amaretto cookie – these were Rex’s favorite he loves raisins and there were lots of them in this almond flavored cookie.

The last one is the Vanilla Chocolate Chip – it has the prefect balance of Vanilla and Chocolate Chip.  Two flavors that are meant to be together.

IMG_1314 When I went back to Wisconsin this past summer I was introduced to some great chips.  They are called Beer Chips®.Which are thick-cut kettle style potato chips coated with a major dose of the world’s most perfect beverage: BEER. They’re made even better with a generous glazing of sugar, honey and salt.  Beer Chips do not contain alcohol. They will not impair your ability to drive, but they will make you the life of the party or at least my brother Andy thought he was since he brought the chips.  Its hard to explain the flavor but they were good and a bag didn’t last long and they didn’t need dip.

The second product I tried was Pub Pretzels.  I loved the flavor ~ they had a tangy garlic flavor.  I loved that they were small pretzels and had lots of taste.

There are a couple other products in this line including Margarita kettle chips which are salt and lime flavored, Hot Potatoes which are are a Spicy Bloody Mary kettle chip and Barbecue Rib kettle chip.  I can’t wait to try the others.

IMG_1219We love Kettle Cooked Chips at my house and the summer is the prefect time to serve them with BBQ or a family get together.  I recently tried a couple different chips from Boulder Canyon.

What I really like about Boulder Canyon is that the chips are all natural, gluten free, zero trans fat and zero cholesterol.

The first ones I tried were Canyon Cut wavy potato chips ~ yummy!  I had a bag of Sour Cream & Chive and they had so much flavor.  They were nice thick chips with ridges.  They were crispy and were perfect for dunking in my favorite dip.  Everyone loved these – the bag was the first bag to be empty. There are a number of different flavors including Honey Bar B Que and Natural.

The second bag of chips were Kettle Chips which were thick slices of slow cooked chips – made in small kettles and used sunflower and/or safflower oil. The chips we had were Red Wine and Vinegar ~ Rex loved these!  Matter of fact I think he ate most of the bag.  They had tons of flavor and just the right amount of salt. There are a number of other flavors including Natural and Parmesan & Garlic.

Boulder Canyon carries a whole line of great tasting chips including vegetable crisps, hummus chips and rice and bean chips I am sure you can find something everyone in your family enjoys. laraI love to try new products and recently tried LÄRABAR® which are a blend of unsweetened fruits, nuts and spices. They are made from whole food, each flavor contains no more than nine ingredients.

IMG_1357LÄRABAR® come in 18 flavors and I tried a few different ones.  The first one was Key Lime Pie ~ it was great tasting!  It is made with Key Lime, unsweetened coconut, dates, cashews and almonds.  The Key Lime makes it taste fresh.

The next one was the Pecan Pie – I love pecan pie so I thought this would be good tasting too – it only uses 3 ingredients pecans, dates and almonds. If you are a nut lover this one is for you.

IMG_1358Next was the Lemon Bar which was quite good  it was tart and tangy and had real lemon, dates, cashews and almonds.

The last bar the Cashew Cookie ~ was my favorite – it contained only two ingredients cashews and dates.  This bar was rich and creamy and contains 6 grams of protein.

What I liked best about all of these bars was that they were pure and simple and with only a few ingredients.  They were great for the afternoon slump and helped keep you full feeling.  I am sure all of the bars are as great tasting as the ones I tried.

I always love to have some appetizers around in case friends drop in or I want a little snack watching a movie or a Packer game.  I recent tried some great snacks from Farm Rich.  They have a whole line of great sounding snacks.  What I like about them is that they are easy to prepare and come in a bag large enough to feed a group of people.

IMG_1343 The first thing I tried was the Original Meatballs.  These were so easy to use – like I said they come in a nice size bag so the first thing I did is add them to my Spaghetti sauce.  The meat balls are made with ground beef and pork and seasoned to perfection.  Since they are fully cooked they just needed to be heated through.   I have also put them in a crock pot with BBQ sauce.  They are so versatile you will want to have them on hand.

Here are the Mozzarella Bites – yummy mozzarella cheese surrounded by soft pizzeria dough. I love that they are bite size and they taste great by themselves or with pizza or spaghetti sauce for dipping. I made mine in the oven but they can be microwaveable – and they come in a big bag 44 oz – which serves about 15 people.  What a great value.

These were my favorite Mozzarella Sticks ~ they are so yummy! They are made with 100% real mozzarella cheese and have  alight breading that is seasoned perfectly.  They taste better than what you get in the restaurant.  I baked mine but you could also deep fry them.  I also served them with pizza sauce.  They didn’t last long with Rex and Joey there.

Farm Rich has 15 great snacks to enjoy anytime of the day.  I noticed they even have a Crispy Dill Pickle. dang_chips_logoI love coconut so when I found these Dang Coconut Chips I knew they would be good.  These chips are made from copra (meat of the coconut).  The meat is sliced out of mature coconuts and then toasted to a golden brown with a dash of sugar and salt. The roasting brings out the natural sweetness. IMG_1099

What I like about Dang Coconut Chips is that you don’t have to eat a lot to feel full.  Copra is high in fiber so you feel fuller faster.  I think they make a perfect after noon snack not only do they taste good they give you a a boost of energy too.  Dang Coconut Chips are vegan, gluten free, non – GMO, have no cholesterol and high in Lauic Acid.

I didn’t know how versatile coconuts are and how many uses there are for them.  The husks can be burned to produce electricity, the juice is delicious, light and packed with electrolytes, and the meat can be eaten raw for a snack, pressed into coconut milk, or toasted for a truly special experience.  Many cultures have been subsisting on coconuts for generations.

In my search for things that are good for you and good tasting I found some great tasting chips called Beanfields. These chips are made out of beans.  Why beans?  There are many reasons why – here are just a few:

  • Beans are rich in nutrients including fiber and protein
  • Beans rarely cause an allergic food reaction
  • Beans are an affordable protein source
  • Beans fix nitrogen in the soil
  • Beans take less water to grow per pound than any other protein source

What did I like about Beanfields Healthier Snacks?  I liked the taste and distinctive crunch. They also come in some great tasting flavors including Nacho, Sea salt, Pico De Gallo, Salt N’ Pepper, and Unsalted. My favorite was the Pico De Gallo ~ it had just the right touch of spice for me.  You can eat them plain or try some salsa with your chips.

I recently found some really fun cookies!  They are from The Cookie Department. They like to think of their cookies as “fully functional” and not only are the cookies delicious they each serve a purpose. They are made with natural ingredients.

Here are the ones I tried. The Chocolate Chip Nookie – it is a chocolate chip cookie infused with Maca Root, which is a Peruvian Root that is known to be a natural aphrodisiac.  It was very good and had a touch of sea salt.  I didn’t notice any side effects of the aphrodisiac – maybe I needed a second cookie!

The Great Full Cookie is a vegan sweet potato, cranberry oatmeal cookie. Both sweet potato and cranberry are a good source of antioxidants.  This I think was my favorite of the 4 cookies I tried.

IMG_1043The Tough Cookie is a peanut butter toffee cookie infused with 10 grams of whey protein – great before a work out.  This one was also very good.

The last one I tried was the Awaken Baked – which is a caffeinated chocolate chip cookie infused with fair trade coffee.  It is equivalent to one cup of coffee! What a great way to start your morning.

The other cookie that they make is The Snap Back – a chewy gingersnap infused with cayenne pepper, cloves and blackstrap molasses. They sell this cookie as their hangover cookie.  It sounds like it would be pretty good.  I am sure it is a hit with college kids.
