Have you ever tried turkey sausage or turkey bacon?  I have not yet tried the bacon but I often use turkey sausage and I have found that Jennie-O has some really good tasting ones.  I used these Turkey Breakfast Sausage Links the last weekend with our breakfast and Rex ate them right up.  I didn’t mention to him until he ate his that they were turkey and he was very surprised. I also use ground sausage without much of a flavor difference and turkey is so much leaner and better for you.  You can swap it in any recipe you would use ground beef like tacos, spaghetti or even tater tot casserole.  Check out Jennie-O’s website for lots of great tasting recipes.

Here are some Turkey Sausage Mini quiche I made last weekend.  I made them up on Sunday and I have been taking one to work for breakfast these past couple days.  They have lots of flavor and are very filling.  They are great to just heat up in the microwave.IMG_0138

Turkey Sausage Mini Quiche

Ingredients

1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links

1 tablespoon vegetable oil

1 green pepper, chopped

2 cups sliced small mushrooms

1 tablespoon finely chopped chipotle peppers in adobo sauce

2 cups egg substitute or 8 eggs

¼ cup milk

¼ cup chopped fresh cilantro

1 cup shredded Mexican blend cheese

⅓ cup thinly sliced green onions

Directions

Heat oven to 350°F. Spray 12 muffin cups with cooking spray. Cook sausage as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. Chop into pieces.

In large skillet over medium-high heat, add oil, green pepper, mushrooms and chipotle peppers. Cook 5 minutes, stirring occasionally, until mushrooms are cooked.

In large bowl, whisk eggs, milk and cilantro until well mixed. Stir in cooked sausage, cheese, mushroom mixture and green onions. Spoon mixture into muffin cups, filling approximately ¾ full. Bake 20 minutes or until set.

  3. I love using the Jennie-O ground turkey. I make turkey loaf instead of a meat loaf. I’ve also made turkey meatballs and they are lighter in taste than using ground beef. The sausage by Jennie-O is very good too.
