tabesI have received one of my favorite kitchen products from Tabletops Unlimited. It is a Dutch Oven or as I call it “My Magic Pot”.  Everything I make in it turns out wonderful.magic pot It is a very heavy and covered in enamel and has a self basting lid.  I can use it on the stove top or in the oven.  One thing that I really love about it is that it is easy to clean which was a big surprise.





My favorite thing to make in this pot is a beef roast with carrots.  Look how yummy that looks!  I have made roast in my crock pot but they don’t turn out as well as they do in this pot.

What I like to do is start my roast on the stove top – I melt butter and olive oil first and then I brown up the carrots first.  Once they are brown I remove them and sear the roast so it is brown on all sides.  Sometimes I need to pour a bit of wine in to get the little pieces off that stick to the bottom.  Then everything goes back in the pot along with onions, thyme, rosemary, beef broth and then maybe some garlic.  Then I put the cover on and cook in the oven for about 3 hours on 250 degrees.  It turns out perfect!  Rex and Joey love it!  I have made lots of dishes in this magic pot including spaghetti, beef stew and roasted a chicken.
