I know I haven’t posted in a couple weeks – but I wanted to update you on my progress. I am now down about 37 pounds! Yeah! I won’t tell you that it is easy to keep going but I love how I am feeling. I have more energy and I am feeling better. I have a big goal but I am taking it one day at time.
One thing that really helps me is the great tasting, real food from Personal Trainer Food. It is very easy to make – just pop in the microwave and heat. I also have been adding some of my own touches to the meals. This dinner here I added cheese to both the cauliflower and chicken. I also added a few bacon bits to the chicken. It was yummy! One night I sauteed some mushrooms and onions and then added a bit of Parmesan cheese to them, then used them to top a garlic chicken breast. It was great.
This week I am going to be making a couple side dishes using the vegetables I have. One of them is using the cauliflower and cheese – I will take a picture and provide the recipe next week if it turns out.
Next week – Rex and I are heading out to Vegas for a few days. I am really looking forward to the trip. I know we will be doing lots of walking and probably eating. I am going to try to stay on my plan and stay way from the sugar and carbs.
