Puritan's Pride Tag

I love fresh berries and know how good they are for you.  They are a nutritious powerhouses so when I was offered the chance to try a variety of different nutritional supplements from Puritan’s Pride I jumped at the chance.IMG_0251

I was also sent a couple different berries.  The first was Organic Raw Goji Berries.  I have read that they are one of the most nutritionally wholesome foods on the plant but had never tried them.  I was surprised at how good they tasted and was surprised that they are considered a complete source of protein and have incomparable amount of amino acids, vitamins, protein, iron, and other nutrients. Now that I have tasted them and know how good they are for you I will look for them.

The last product is Organic Raw Mulberries ~ when doing research on them I found that they have high amounts of iron, calcium, protein and vitamin C.  I also liked the flavor of them they were a bit crunchy and reminded me of dates.

We eat a lot of chicken at my house and I am always looking for new recipes. I recently received 125 Best Chicken Recipes from the Robert Rose publishing company.  I was so happy with all the good recipes and idea’s that the book had.   Most of the meals could be made in 20 or 30 minutes so perfect for a fast week night dinner. I was surprised at the wide variety of recipes there were some that could be made in a skillet, oven or grill.

A couple of my favorites that I will make again are the Thai Chicken Noodle Salad and the Orange-Rosemary Glazed Chicken Breast.  Both of these recipes were easy to make and had lots of flavor.  I thought the menus that were suggested with each dish were a great addition.

This weekend is Memorial day and the beginning of grilling season so we are going to have the Pesto-Grilled Chicken with Fresh Tomato Pasta. Pesto-Grilled Chicken with Fresh Tomato Pasta, page 170

A small amount of pesto sauce pushed under the skin of chicken breasts not only gives them a lovely flavor, but helps to keep them moist while they cook.


Grease barbecue grill and preheat to medium-high

4                            bone-in skin-on chicken breasts                         4

1/2 cup               pesto sauce                                                   125 mL

Fresh Tomato Pasta

4 cups                  corkscrew pasta (or 12 oz [375 g] fettuccine)1 L

1 tbsp                  olive oil                                                             15 mL

4                            ripe tomatoes, unpeeled                                       4

Half                      red onion, coarsely chopped                          Half

2                            cloves garlic, minced                                              2

2 tbsp                  chopped fresh basil (or 1 tsp [5 mL] dried)                                         25 mL

2 tbsp                  chopped fresh oregano (or 1 tsp [5 mL] dried)                                 25 mL

2 tsp                     red wine vinegar                                            10 mL

1 tsp                     packed brown sugar                                        5 mL

Salt and pepper

  1. Gently poke your fingers under the skin of each breast and lift the skin slightly. (Be careful not to tear the membrane that connects the skin to the chicken.) Gently stuff 2 tbsp (25 mL) pesto in each breast, massaging to even out.
  2. Starting with the pesto-side up, grill chicken for 5 minutes. Turn the breasts and grill for another
    5 minutes. Turn again and finish on the grill with the pesto side up for 5 to 7 minutes or until the chicken is no longer pink inside.
  3. Fresh Tomato Pasta: Meanwhile, in a large pot of boiling salted water, cook the pasta until tender but firm. Drain well and toss with the oil.
  4. While the pasta cooks, core the tomatoes and coarsely chop. In a bowl combine tomatoes, onion, garlic, basil, oregano, vinegar and sugar. Add salt and pepper to taste. Toss with the pasta and serve immediately.

My Review:

I really enjoyed this book and am going back to read the others that came before.  The story takes place on Cranberry Island.  Natalie owns the bed and breakfast there.  While she is out getting supplies for dinner she sees a boat floating in the water – she goes over to it and sees a dead body in it.  It is Derek ~ he has only been back on the island a short time.  But has a few enemies already ~ including his ex-boss.  Who murdered Derek?  Natalie needs to find out who the murder is.  Read Death Runs Adrift.

Easy Beef Tips

I love to make meals that taste good and are easy to make.  I decided on Sunday to make Easy Beef Tips over noodles.  The Tips tasted good and actually had left over for lunch the next day which I thought tasted even better.  I have been making this recipe for years so I am not sure where I found and I have added to it till I found just the right flavors.

Easy Beef Tips ‪#‎goodcookkitchenexprt
  • 2 tbsp Olive Oil
  • 2 to 3 cloves minced garlic
  • 1 cup sliced onions
  • 1 cup sliced mushrooms
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp paprika
  • ¼ cup flour
  • 16 oz stew meat
  • 4 servings of your favorite noodles
  • 1 can of cream of mushroom soup with herbs and garlic
  • 1 tbsp Worcestershire sauce
  • ½ cup water
  1. Heat 1 tbsp oil in Dutch Oven pan
  2. Saute garlic, onions and mushrooms together until soft about 5 minutes then remove from pan
  3. Mix pepper, salt, paprika and flour together ~ I use a plastic bag
  4. Then place the meat in the flour mixture and coat ~ I do a small amount at a time
  5. Heat remaining oil in Dutch Oven then brown the meat.
  6. Once the meat is browned add the onion, mushrooms and garlic back in the pan
  7. Add the soup, water and Worcestershire sauce to the pan.
  8. Stir until it is well mixed.
  9. Cook either in the oven to finish until the meat is tender on about 300 degrees ( I leave it in the oven about 1½ hours). Or simmer on burner till tender.
  10. Serve over your favorite noodles, rice or mashed potatoes


I received a few new kitchen gadgets from Good Cook that I used while I was making my dinner. I just love kitchen gadgets and love trying new things. Here is what I received.


Drawer 2

1. Safe-cut Can Opener ~ Don’t laugh but the first time I used it I thought it wasn’t working.  I love that it cuts under the lid so you have a nice clean cut.

2. Pot Clip Holder ~ I had never seen one of these – it is in the top right – it clips on to your pot and you can put a spoon in it to hold it in place. I have a bamboo skewer in mine because if you place the skewer over a pot of boiling pasta it will not over flow.  It really does work on preventing boil-overs.

3. Flip Measuring spoon ~  That is the bottom right picture. I love this spoon double sided pockets that inverts to different measuring capacities of 1/4 tsp, 1/2 tsp, 1 tsp, and 1 tbsp. I use it often!

4. Egg Separator ~ This sure makes separating the yolks from the whites a lot easier!

5. SMART Ice cream scoop – Great Scooper who would have thought of this it splits in half to release perfect balls of ice cream with no residue.

Rex is holding one of my new favorite cupcake pan from OvenArt.  I love this silicone muffin pan it is so easy to use and clean up is a breeze! I have some metal muffin pans but I hate that you always have to use a cupcake liner in them – if not it is hard to clean.  After awhile I noticed with my other pans they get dented and have runs on them.

I wondered how the silicone pans worked for awhile – did they leave your food with a funny taste? How would they hold up in the oven? You don’t need use cupcake liners so you save money and no waste.  The muffins I made here came out of the pan easily and tasted good.  No funky taste.  The pan can go into a oven up to 450 degrees, it can also be put in the freezer and the dishwasher.

Talk about ease of cleaning I just filled the sink with water and dish soap and wiped the holes out with a rag.  No scrubbing and the blueberries didn’t stain the pan.

“I was, uh, just wondering if—” Her lips clamped shut as though she couldn’t force herself to say the words. Her fingers fidgeted, and she couldn’t stand still. It was almost comical watching her fight whatever inner battle was going on in her mind.

“Out with it, Emma,” Kevin said as he fought back a smile.

Her eyes met his for a brief moment before looking down at the floor. “Is that job offer still on the table?” she said in a rush, still looking at her feet.

Anxiety flared in Kevin’s gut for a moment, then quieted almost as quickly. Not only was Emma intelligent and confident, but she was strong and good. She’d do fine.

“Yes,” he said firmly. “The offer is definitely still on the table.”

Hopeful eyes turned up to his—eyes brimming with moisture. She threw her arms around Kevin and hugged him tight. For a few shocked moments, he stood there, wondering what to do. Then he wrapped his arms around her the way he’d wanted to do earlier. As she sniffled into his shirt, he rested his chin on her head. Her hair smelled lightly of cherry blossoms, and her body felt soft and strong at the same time. He didn’t want her to pull away.

But she did eventually. Her eyes were bright with a mixture of defeat and relief. Kevin knew it had cost her a lot to ask him that, yet she’d done it. And he knew exactly who she’d done it for.

My Review:

This is one of my favorite books I have read in a long time.  I loved the characters and was sad when it was over.  Emma moves to her Aunts house along with her two nieces.  She is taking care of them for a year so that her brother can work a construction job in another state to save up some money.  His wife was killed in a accident a few months ago so Emma was the only one who could look after the girls.  She meets the annoying neighbor Kevin who keeps giving her things including a job which she doesn’t really want but needs so she can afford to take care of the girls. Emma wasn’t the  normal kind of girl Kevin dated but maybe that is what he liked.  You will need to read Prejudice Meets Pride to see what happens.  Be on the look out for the next two in the series ~ I can’t wait!!
