IMG_1757Does your family all eat at the same time?  Rex’s son Joey lives with us and general he doesn’t come home till after dinner.  I often make up a plate for him and put it in the fridge so he can have something other than cereal.  In the past I would just put a piece of saran wrap on it.  Sometimes it stayed on the plate – sometimes it didn’t.  Well I now use a PlateTopper which has suction and sticks to the plate.  I love it!

The PlateTopper has an air tight seal that helps your food stay fresher for longer period of time.  It is tough and strong – it helps keep your food from spilling in the fridge.  You can also use it in the microwave ~ it helps prevent those awful splatters.  You can just top your plate, store it, heat it and then eat the food right off the plate.

No more looking for a container and a lid that fits.  This lid comes in two sizes the original and the mini so it fits what every plate you need covered. It is also top rack dishwasher safe and can go in the freezer.

I love my PlateTopper and use it all the time – I have a couple of them and you will often see one or two in my fridge. IMG_1802I love to cook but some nights it is hard to think of something to make.  I like to try new things and my meals have to be quick during the week ~ Rex works the graveyard shift so I like to make something before he leaves.  That normally gives me an hour between when I get home and he leaves. Recently I found these Ready Sauces from Lee Kum Kee.

IMG_1386The Panda Brand sauces from Lee Kum Kee come in 5 great flavors including Panda Brand Lettuce Wraps, Sauce for Broccoli Beef, Sauce for Kung Pao Chicken, Mongolian Beef, and Sauce for Orange Chicken.  The best thing about the sauce other than they are fast, easy and taste great is that they contain no MSG added and no preservative are added to the sauce.

I made the Panda Brand Sauce for Orange Chicken, steamed broccoli  and fried rice the other night and it was so easy!!!  I just browned the chicken and added the sauce.  The Orange Chicken had great flavor. The taste was like a restaurant-quality Chinese meal at a lot less cost.  The packages gives you ideas to add to your dish but you can tailor it to your own family’s taste. For instance Rex doesn’t eat broccoli so when I make the Sauce for the Broccoli Beef I will probably add green beans for him.

treeI love the holidays! I love decorating my house and putting out all the wonderful lights, trees, ornaments and wreaths.  I usually just buy a wreath from Trader Joe’s and put a bow on it.  This year I received a lighted wreath from Tree ClassicsIMG_1912

When I moved earlier this year I lost all of my holiday decorations.  I think they are up in the guys attic that I rented from and do not want to go back there and get the stuff I left.  So when I was looking for a new Christmas tree I found this Flat-To-Fabulous Fully Decorated, Pre-Lit 6FT Christmas Tree from BrylaneHome.  IMG_1904

This tree was already decorated with french ribbons, bows and ornaments. There are 350 twinkle lights.  It comes flat like a pancake.  All we did is Rex put the stand together and the pole to hold the tree.  Then we just put the tree on the top and it unfolded.

IMG_1907Look how great it looks!  It took maybe 15 minutes to put it up The only thing I needed to do once we had the tree on the stand was straighten the ribbons.  I love the Red and Silver color that the decorations are in.   I love that I have nothing else to buy to decorate the tree.  IMG_1905

It fits in a flat box for storage.  Since moving we just don’t have much space.  Rex’s son is staying in the spare room that I normally would store things.  So this tree is prefect for us.

100_0251I love to bake and I love the smell of pumpkin and all the spices that go with it. One of my favorite is making pumpkin cookies – I make them two ways – as cookies and as bars. I have been making these for years and I am not sure were the recipe even came from but they are yummy!

100_0247This is the prefect size pan 11″ x 7″  it is a nonstick biscuit & brownie pan from Good Cook.  I will make half the cookie mix in the pan and the other half as cookies.

I also have the perfect tool for getting the seeds out of pumpkins. It is a Good Cook Pumpkin Scoop ~ the best thing is that it also comes with a perforated knife.  So you can scoop and use it to cut too.  It was made for pumpkins but I bet it would be good for scooping melons, squash or potato’s. I used canned pumpkin for my recipe. I couldn’t find any fresh ones – we love to roast the seeds ~ but the canned pumpkin is much less time consuming.

Pumpkin Cookies with Cream Cheese Frosting

Ingredients
  • 2 cups butter, softened
  • 2 cups granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 15 ounce can pumpkin
  • 4 cups all-purpose flour
  • ½ cup of butter (1 stick), room temperature
  • 8 oz of cream cheese (1 package), room temperature
  • 2 - 3 cups of powdered sugar
  • 1 teaspoon of vanilla extract
Instructions
  1. Preheat oven to 350 degrees F. In a large bowl, beat 2 cups butter with an electric mixer. Add granulated sugar, baking powder, baking soda, salt and pumpkin pie spice. Mix until combined. Add eggs and 2 teaspoons vanilla; mix until combined. Add pumpkin and the flour.
  2. Drop dough by heaping teaspoons 2 inches apart on an ungreased cookie sheet. Bake in the preheated oven for 10 to 12 minutes.
  3. Let the cookies cool completely.
  4. For the cream cheese frosting mix together the butter, cream cheese and powdered sugar. Mix till well combined. Add vanilla and frost your bars or cookies.
