Happy National Creamsicle ~ what is your favorite flavor?  Mine are the raspberry with vanilla ice cream in the middle.

Frozen Creamsicle

Nostalgic simple but yummy creamsicle bars – only 85 calories.

Number of Servings: 8

Ingredients

    2 Cups of any low-fat vanilla yogurt
    A (6 oz) can of frozen orange juice concentrate works best, but orange juice in a box works too.
    A teaspoon of vanilla extract for added flavor

Directions

1. Put all ingredients into a blender. Blend ingredients until smooth.
2. Pour into individual paper cups or molds and freeze. Insert popsicle sticks (if desired) when mixture is slightly frozen.

Bacon Breakfast Taquitos
I don’t know about you, but I am always looking for an easy potable breakfast.  I found this recipe today that sounds really good and easy. I think these would be good with any veggies add or ham to replace the bacon.
Ingredients:
1 slice center-cut bacon or turkey bacon
1 egg
2 tablespoons shredded cheese
Two 6-inch corn tortillas

Directions:
Preheat oven to 375 degrees. Spray a baking pan with nonstick spray.

Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.)

Scramble egg in frying pan sprayed with nonstick spray. Mix in cheese and crumbled bacon stir mixture.

Place tortillas between 2 damp paper towels. Microwave for 15 seconds, or until warm and pliable.

Evenly distribute egg mixture between the two tortillas. Tightly roll each tortilla into a tube, and place seam-side down in the baking pan. If needed, secure with toothpicks. Lightly spray with nonstick spray.

Bake until crispy, 10 – 12 minutes. Enjoy!
